DEPARTMENT OF MEAT SCIENCE AND TECHNOLOGY
History of Department
The Department of Meat Science and Technology was created in the year 1958-59. The department was recognised as post-graduate department in the year 1962, to promote the principles of hygienic meat production as the first of its kind in India. A modern meats laboratory was established in the year 1972.
The Department was created to educate the students on various aspects of meat hygiene, fresh meat technology, processed meat technology, developments of various value added novel products, animal by-products utilization and veterinary public health. To promote the principles of hygienic meat production, a Modern Meats Laboratory (with facilities for slaughter of food animals, processing of meat and meat products with storage facilities), Quality Control Laboratory, Meat Species Identification Laboratory, Meat Microbiology Laboratory and Meat Products Processing Laboratory were established.

The following are the various infrastructural facilities developed in this department.

  1. A Modern Meats Laboratory with facilities for slaughtering and dressing of food animals, first of its kind in India was established and commissioned in the year 1972.
  2. Under Indo-UK collaborative project, a meat species identification laboratory was established in the year 1991.
  3. Meat microbiology laboratory.
  4. A modular chiller and freezer room and a plate freezer for further processing of meat.
  5. A semi automatic poultry processing line.
  6. A meat products processing laboratory equipped with various processing equipments
  7. A 63.5 kV generator for sustained power supply.
a) This department has successfully completed so far ten externally funded research schemes, one University Plan Scheme and One part-II scheme on various aspects of Meat Science and Technology including animal by-products utilisation.

The Following are salient research findings

  1. Technology developed for processing of animal agricultural waste (animal intestine) into production of sports guts for tennis and badminton racquets and catguts. The Slime obtained during the processing of intestines was converted into slime meal for livestock as feed supplement.
  2. Technology developed for identification of meat species of various food animals and their adulteration.
  3. Suitable packaging methods and suitability of different packaging materials for various meat foods were identified.
  4. Technology developed for preparation of various novel value added meat products including canned meat foods from low value meat cuts.
  5. HACCP models were developed for slaughter and dressing of different food animals including poultry.

Internship training on Livestock Technology and services at Meat Plant was offered for students of Madras Veterinary College, Chennai and Veterinary College and Research Institute, Namakkal.
Training was offered on 16.07.2009 and 23.07.2009 to Ms.Yulie Meneses and Mr.Alex Nelson, students of University of Nebraska, Lincoln, as part of the student exchange programme, MoA TANUVAS has with the University of Nebraska, Lincoln.

Inaddition, Meat Science and Technology courses were offered to B.Tech.,(Food Processing) students of Institute of Food and Dairy Technology, Koduvalli

The department was recognised as post-graduate department in the year 1962 and offering Master's degree programme in Meat Science and Technology. The Ph. D programme in Meat Science and Technology was started in the year 1985.

Research at a glance
This Department has completed ten research schemes funded by Indian Council of Agricultural Research besides one Part II scheme and one university plan scheme.
Research Schemes completed so far:
  1. An all India Co-ordinated research project on “Utilization of Slaughterhouse By-products was carried out during 1970 - 1973.
  2. An ICAR Adhoc scheme on “Processing of Animal Agricultural Wastes (Animal intestines) into Production of Sportguts, Catguts and Livestock Feed Supplement” was conducted during 1985 - 1989.
  3. An ICAR Scheme on “Meat Species Identification” was undertaken in the department during 1991- 1992.
  4. An ICAR Scheme on “The Suitability of Different Packaging Materials for Different Meat Foods” was carried out during 1990 to 1993.
  5. A Scheme on “Microbial Quality of Pork and Pork Products” was carried out during 1993 to 1996.
  6. A 100% ICAR financed scheme on “Carcass Quality and Yield Characteristics of South India Non-descript Buffaloes” was carried out during 1997- 2001
  7. NAT Project on “Quality Assurance and Monitoring of food from Livestock and Poultry" was completed on 31.04.2004.
  8. ICAR Scheme on “Effect of Modified Atmosphere Preservation on Meat Quality" completed on 28.04.2004.
  9. National Agricultural Technology Project on “Processing of Pork, Broiler and Eggs" was completed on 30.11.2004.
  10. Ministry of Food Processing, Government of India, New Delhi and TANUVAS project “Development of emulsion based meat and meat products utilizing buffalo lean meat and its offals was completed on 17.09.2009.
  11. A Part-II Scheme on “Preservation of meat in Modular Cold Storage” was conducted during 1997- 1998.
  12. A University Plan Scheme on the “Establishment of Quality Control Laboratory in Meat and Meat Products” was carried out during 1989- 2002.
Ongoing Research Scheme:
  1. An All India Coordinated Research Project on “Post Harvest Technology” funded by Indian Council of Agricultural Research is in progress in the department. The total budget of the scheme is Rs.139.16 lakhs in which 75% is ICAR share (104.37lakhs) and 25% is state government share (34.79 lakhs) for a period of three years. The scheme started functioning from 05.08.2004.
  2. Income Generation Proposal (Revolving Scheme) on Production and marketing of ready- to- cook and ready- to- eat meat products
  3. Externally funded scheme on “Evaluation of animal by- products like ossein, sinews, bone meal and sludge on broiler performance”
