DEPARTMENT OF DAIRY SCIENCE
The Department of Dairy Science was started in the year 1947 to teach the subject of Dairy Science and Animal Management t the under graduate students. Consequent to the upgradation of the College during 1958 as a Post graduate Institute, the Department started offering Post graduate degree in Dairy Science. From 1985 onwards, M.V.Sc. in three viz., Dairy Technology, Dairy Microbiology and Dairy Chemistry are being offered. Dr.Stark from U.S.A. was appointed as the first Professor of Dairy Science. Ph.D. programme was started in the year 1978. The Department has a Dairy Plant, where processing of milk and preparing a variety of milk products like khoa, Paneer, Butter, Ghee, Ice Cream, Flavoured milk, Shrikhand, Peda, and Gulabjamun are carried out.
Besides undergraduate teaching, this department has so far produced 3 MSc, 65 MVSc and 21 PhD degree holders.
Two plan schemes are being implemented in this Department, currently for which Dr.B.Suresh Subramanian, Assistant Professor (SS) is the Principal Investigator:
In order to improve the facilities for teaching, research and extension, a Dairy Plant with well established quality control laboratory is in operation. Milk is processed and sold to the staff and public. In addition, various milk products are also being prepared. The main objectives are:
- Processing of milk in the Dairy Plant
- Manufacturing various milk products
- Teaching UG/ PG students in the field of Dairy Chemistry, Dairy Microbiology and Dairy Technology
- Providing inplant training to UG/ PG students
- Providing in-service training to the officers of State Animal Husbandry Department and Tamil Nadu Co-operative Milk Producers’ Federation Ltd.
- Providing training to private entrepreneurs in dairy plant management and milk products manufacture
The objectives of the scheme are
- To offer post-graduate degree courses in (i) Dairy Technology (ii) Dairy Microbiology and (iii) Dairy Chemistry
- To impart practical training in the dairy plant and in quality control laboratories
- To undertake field – oriented research work to provide solution to field problems
- To evolve innovative techniques and to explore possibilities to produce new dairy products by adopting cheaper methods
- To design quick and suitable quality control methods to ensure superior quality milk and milk products to the consumers
An ICAR Scheme on "Biochemical evaluation of lactic acid bacteria for developing antifungal product" is in operation since 04.09.2002, for which Dr. C. Naresh Kumar, Professor and Head is the Principal Investigator and Dr. B. Dhanalakshmi, Associate Professor is the Co – Investigator.
On campus and off-campus training programmes are organised for entrepreneurs, dairy technocrats on Quality Control and basics in processing of milk and preparation of dairy products. Method demonstration on the preparation of milk products are imparted to farmers, entrepreneurs.
